With the holidays coming, all I can think about are all the holiday cookies, appetizers, sides, roasts, turkey and desserts I will soon be able to enjoy. Sometimes however, I’m not sure if I enjoy preparing the meal or simply eating it the most. Depending on the day you ask me, my answer just might be different. I admit – I have not always been the best cook and as I was preparing dinner the other night, I was reminded of just how far I’ve come in the cooking department.
A I was preparing my creamy barbeque chicken dinner and thinking about the possibility of hosting Thanksgiving dinner, I began to reminisce about the time in college, when a friend and I had the bright idea to host a dinner party. Being the inexperienced party hosts we were, we shopped for ingredients the afternoon of the party and started cooking a mere hour before our guests arrived. Supreme party planners we were not!
We started our one and only appetizer, potato skins, first. Assembling them was no problem, but things came to a screeching halt once we took them out of the oven. Somehow, during the cooking process, the potato skins and the pizza pan we cooked them on melded together to make one heavy, bumpy pan. There was no salvaging the appetizers so we quickly threw together our main course and pretended the potato skins never existed.
Our guests were none the wiser about our faux pas, but all these years later it still makes me laugh and puts a grin on my face knowing how far I’m come and how much more wiser as a cook I am. Had we just used a little PAM cooking spray the potatoes wouldn’t have stuck and I wouldn’t have had to buy a new pizza pan the next day.

Serves 4-6
Ingredients
4-6 chicken breasts
6 ounces non-fat Greek yogurt
3 tablespoons barbecue sauce (add more for a stronger flavor)
1 ½ teaspoons honey
Few pinches breadcrumbs
PAM Original Cooking Spray
Directions
- Preheat oven to 350 degrees
– In small bowl combine Greek yogurt, barbecue sauce and honey
– Spray the bottom of a glass baking pan with PAM Original cooking spray and add chicken breasts
– Coat chicken with the barbecue sauce mixture, top with breadcrumbs
– Bake for 25-30 minutes, or until done
– Serve with your favorite side dish and enjoy!
